GROUND TURKEY TACOS

"we hit a double whammy here... it’s cinco de mayo on #tacotuesday so there was no way i was missing out on the celebrations 🌮💃🏽 even though tacos have become a part of my daily life anyways. wherever you are, whatever you’re doing or feeling - tacos always makes things better. ⁣

#whatsonmyplate@positivelyplantain tortillas with ground turkey (seasoned with umami, paprika, sea salt + ground pepper in garlic olive oil), sauteed bell peppers, fresh mango, avocado + homemade ‘chipotle’ garlic aioli 🌿 ⁣

how to make aioli: in a food processor, blend together - 4/6 roasted garlic cloves, 4 egg yolks, 1 tbsp. dijon mustard, 2 tbsp. lemon juice, 1.5 cups of garlic infused olive oil (add extra if needed), 1 tsp. raw apple cider vinegar, sea salt, black pepper, cayenne pepper + paprika to taste!⁣

RECIPE

INGREDIENTS: 

  • 1 LB GROUND TURKEY
  • 2 POSITIVELY PLANTAIN TORTILLAS 
  • 1/2 MANGO
  • 1/2 AVOCADO
  • 1/2 BELL PEPPER
  • 1 TSP UNAMI
  • PAPRIKA 
  • 1 TSP CAYENNE
  • SALT 
  • BOTTLE GARLIC OLIVE OIL 
  • GROUND BLACK PEPPER 
  • 2-3 ROASTED GARLIC CLOVES 
  • 4 EGG YOLKS 
  • 1 TBSP DIJON MUSTARD 
  • 2 TBSP LEMON JUICE 
  • 1 TSP APPLE CIDER VINEGAR 

INSTRUCTIONS:

  1. Place ground turkey in pan with some garlic olive oil and season with unami, paprika, salt, pepper (1 tsp each). Cook until done. 
  2. Saute peppers in olive oil until cooked. 
  3. To make aioli, blend together the roasted garlic cloves, egg yolks, mustard, lemon juice. apple cider vinegar and 1.5 cups of garlic olive oil. Add salt, black pepper, cayenne and paprika to taste. 
  4. Slice mango and avocado into cubes. 
  5. Heat individual tortillas on a dry pan until slightly browned, pliable, and fully heated.
  6. Add turkey, peppers, avocado and mango to tortilla an drizzle on aioli. 
  7. Serve immediately and enjoy!
