RECIPE

INGREDIENTS 

  • POSITIVELY PLANTAIN TORTILLAS 
  • 1 SMALL APPLE - CHOPPED  (recommend honey crisp or pink lady)
  • 1/2 CUP CHICKPEAS 
  • 1/2 SMALL AVOCADO - CHOPPED 
  • 2 Tbsp. CHOPPED RED OR SWEET ONION 
  • 1/4 CUP PLAIN COCONUT YOGURT 
  • 1/4 tsp SEA SALT 
  • 1/4 tsp GARLIC POWDER 
  • SQUEEZE OF FRESH LEMON JUICE 
  • CHOPPED FRESH CILANTRO 
  • 1-2 Tbsp. PUMPKIN SEEDS 

INSTRUCTIONS 

  • Mix all ingredients together, minus the avocado and the tortillas.
  • Layer the chickpea salad on the tortillas and add avocado
  • Enjoy!
