CHILI LIME CHICKPEA & SWEET POTATO TACOS + BLACKENED SHRIMP TACOS

Yes!! Double the fun, hence double the tacos.. I mean I’m sure you can’t get tired of tacos on your feed, right? So bringing you some delicious tacos - TWO WAYS:

Topped w/ a COLESLAW mix tossed in a delicious Cilantro Jalapeño Sauce!!

Yes, yes!! I got my VEGGIE & NON-VEGGIE peeps covered. You can call these healthy or healthyish depending on how you make the filling & what tortilla you use. I used @positivelyplantain for my veggie ones & @missionfoodsus street taco tortillas for the shrimp ones. @sietefoods tortillas would work perfectly well w/ either one of the fillings, but I didn’t have any on hand. So you do you! I oven roasted the veggie one & air fried the shrimp. You can even cook the shrimp in the oven or the skillet (timings for all 3 noted in the recipe). Another veggie option could be cauliflower & you could also swap the shrimp for chicken or meat of your choice.

The best part is I used the same seasonings for both & trust me this is a good one w/ just the perfect kick!!

RECIPE

INGREDIENTS:

Chile Lime Chickpea & Sweet Potato Tacos 

  • 2 POSITIVELY PLANTAIN TORTILLAS 
  • 1 CAN CHICKPEAS, DRAINED AND RINSED 
  • 1.5 C SWEET POTATO, CUBED (FROZEN OR FRESH)
  • 2 TSP CHILI POWDER
  • 2 TSP PAPRIKA
  • 2 TSP CUMIN POWDER
  • 1 TSP CORIANDER POWDER 
  • 2 CLOVES GARLIC, MINCED 
  • 1 TSP SALT 
  • 1 TSP EXTRA VIRGIN OLIVE OIL 
  • JUICE OF 1 SMALL LIME 
  • 2 TSP WATER

Blackened Shrimp tacos

  • 2 POSITIVELY PLANTAIN TORTILLAS 
  • 1 LB JUMBO SHRIMP, PEELED AND DEVEINED 
  • 1 TBSP CHILI POWDER 
  • 1 TBSP PAPRIKA
  • 2 TSP CUMIN POWDER
  • 1 TSP CORIANDER POWDER 
  • 3 CLOVES GARLIC, MINCED
  • 1 TSP SALT 
  • 1 TSP EXTRA VIRGIN OLIVE OIL 
  • JUICE OF 1 SMALL LIME 

Cilantro Jalapeno Sauce 

  • 2 JALAPENOS, HALVED (REMOVE THE SEEDS IF YOU DON'T WANT IT TOO SPICY)
  • 1 CUP CILANTRO
  • 1/2 CUP GREEK YOGURT
  • 2 CLOVES GARLIC
  • JUICE OF 1 SMALL LIME
  • 1 TBSP WATER
  • SALT TO TASTE 

INSTRUCTIONS:

Chile Lime Chickpea & Sweet Potato Tacos 

  1. Preheat oven to 400 F.
  2. In a medium bowl, mix all seasonings, olive oil and water. Save lime juice.
  3. Toss chickpeas and sweet potatoes into the bowl. Mix until thoroughly covered.
  4. Spread chickpeas and sweet potatoes on a lightly greased baking sheet and bake for 30 minutes (stir occasionally).
  5. Once they are cooked and tender, add the lime juice.
  6. Heat individual tortillas on a dry pan until slightly browned, pliable, and fully heated.
  7. Add potatoes and chickpeas to tortillas with your favorite veggies and drizzle on sauce.
  8. Serve with sauce and Blackened Shrimp Tacos. Enjoy!

Blackened Shrimp Tacos 

  1. Combine everything in a medium bowl, set aside to marinate for at least 30 minutes.
  2. Place shrimp in skillet on medium high heat for two minutes per side or until cooked (can use air fryer or oven alternatively).
  3. Heat individual tortillas on a dry pan until slightly browned, pliable, and fully heated.
  4. Add shrimp and your favorite veggies to the tortillas and drizzle on sauce.
  5. Serve with sauce and Chile Lime Chickpea & Sweet Potato Tacos. Enjoy!

Cilantro Jalapeno Sauce 

  1. Combine all ingredients in a food processor and blend into a smooth sauce. 
  2. Use half of the sauce and mix with coleslaw to top tacos. 
  3. Serve with tacos and enjoy!
