This Creamy Pumpkin Coconut Lentil Soup made my @themaddiemiles is amazingly delicious, paired with one or a few Positively Plantain Tortillas!

INGREDIENTS

1 Positively Plantain Tortilla
-
2 cans 100% pumpkin puree (not pumpkin pie mix)
-
2 C vegetable stock
-
1 can lite coconut milk
-
1 Tbsp. date syrup (or sweetener)

1 medium yellow onion, chopped
-
3 cloves garlic, minced
-
3 tsp curry seasoning
-
1/2 tsp cinnamon
-
1 tsp sea salt
-
1/4 tsp of cayenne pepper or hot sauce if you like spicy!
INSTRUCTIONS

Place all ingredients into your instant pot or pressure cooker. *

Cook on the soup/broth setting for 8 minutes.

Let the pressure release naturally.
