This Creamy Pumpkin Coconut Lentil Soup made my @themaddiemiles is amazingly delicious, paired with one or a few Positively Plantain Tortillas!

To make this delicious recipe, I simply used my creamy coconut pumpkin soup and added some lentils for extra protein and fiber🙌🏾

  • 1 Positively Plantain Tortilla 

  • 2 cans 100% pumpkin puree (not pumpkin pie mix)

  • 2 C vegetable stock

  • 1 can lite coconut milk

  • 1 Tbsp. date syrup (or sweetener)

  • 1 medium yellow onion, chopped

  • 3 cloves garlic, minced

  • 3 tsp curry seasoning

  • 1/2 tsp cinnamon

  • 1 tsp sea salt 

  • 1/4 tsp of cayenne pepper or hot sauce if you like spicy!


  • Place all ingredients into your instant pot or pressure cooker. *

  • Cook on the soup/broth setting for 8 minutes.

  • Let the pressure release naturally.

  • Serve and enjoy!
