RECIPE

INGREDIENTS:

  • 4 POSITIVELY PLANTAIN TORTILLAS 
  • 1 CAN OF JACKFRUIT
  • 1 TBSP. CURRY PASTE (I LOVE LUNA FIXA)
  • 1 4 OZ CONTAINER OF COCONUT YOGURT
  • 1 TSP CURRY POWDER
  • 1 C COOKED CHICKPEAS
  • 1 TSP PAPRIKA
  • 1 C CHOPPED KALE
  • RED ONION - CHOPPED & FOR GARNISH
  • CILANTRO
  • LIME
  • AVOCADO

INSTRUCTIONS:

  1. Combine your jackfruit, curry paste, coconut yogurt, chopped kale, and curry powder in your instant pot/pressure cooker and cook on high pressure for 8 minutes. Can use stove top but stir frequently. Cook until jackfruit is soft and tender (10 mins on low/med heat).
  2. Toss your chickpeas in paprika and air fry or roast in the oven for 5 minutes.
  3. Heat individual tortillas on a dry pan until slightly browned, pliable, and fully heated.
  4. Assemble tacos and garnish with chopped onion and avocado.
  5. Serve immediately and enjoy!
