All you need are some tortillas (preferably plantain tortillas from @positivelyplantain ), some coconut oil, cinnamon, and coconut sugar! Boom shakalaka.

RECIPE

INGREDIENTS 

For the pancakes:

  • 1 POSITIVELY PLANTAIN TORTILLA
  • 1/2 TBSP. COCONUT OIL
  • 2 TSP. COCONUT SUGAR 
  • 2 TSP. CINNAMON 

Additions:

  • SHREDDED COCONUT
  • ALMOND/NUT MILK 

INSTRUCTIONS 

  1. Coat your tortilla with the coconut oil. Front and back!
  2. Mix together the coconut sugar and cinnamon. Sprinkle on the front and back of your oiled tortilla.
  3. Pan fry for 3 minutes on both sides, or until crispy.
  4. Let cool, preferably on a drying rack. This is essential as it will ensure the cereal’s crispiness!
  5. Enjoy!
