PALEO CHICKEN PATACONS

RECIPE

Taylor Dreitlein @paleoetiquette 

INGREDIENTS:

  • POSITIVELY PLANTAIN TORTILLAS.
  • 1 CUP CUBED CHICKEN, CUBED
  • 1/2 AVOCADO
  • 1 TABLESPOON DICED RED ONION
  • 1/2 TSP GARLIC POWDER
  • 1/2 TSP SEA SALT
  • 1 TABLESPOON CHOPPED CILANTRO
  • 1/4 CUP SLICED CUCUMBER
  • 1/2 TOMATO, CUBED

INSTRUCTIONS: 

  1. Make guacamole by mashing together avocado, half of the cilantro and red onion, the garlic powder and sea salt. 

  2. Make pico de gallo, by combining cubed tomato and the rest of the red onion and cilantro.

  3. Heat individual tortillas on a dry pan until slightly browned, pliable, and fully heated or in the microwave for 30 seconds on each side.

  4. To two warmed tortillas: add guacamole, cubed chicken, pico de gallo, and sliced cucumbers. 

  5. Serve immediately and enjoy!
