PLANTAIN BREAKFAST TACO

How To Make:
1️⃣ microwave plantain tortillas for 15-30 seconds (or until they start to curl up) then bake on 350 for 10 minutes (or until crispy)
2️⃣ mix eggs (or #vegan egg option) with a little unsweetened almond milk and sauté in avocado oil, sea salt & pepper 🍳 sauté spinach in the same in a separate pan
3️⃣ spread @kitehillfoods almond milk cream cheese on crispy tortillas, and top with cooked eggs, spinach, uncured turkey bacon and vegan cheese (I used @violife mozzarella). Drizzle with paleo hot sauce (I used @tangochilesauce) 😋

RECIPE

INGREDIENTS:

  • 2 POSITIVELY PLANTAIN TORTILLAS
  • 2 EGGS OR EGG ALTERNATIVE 
  • UNSWEETENED ALMOND MILK 
  • AVOCADO OIL 
  • HANDFUL OF SPINACH 
  • SALT
  • PEPPER
  • KITE HILL FOODS ALMOND MILK CREAM CHEESE
  • UNCURED TURKEY BACON
  • VIOLIFE MOZZARELLA 
  • TANGO CHILE SAUCE 

INSTRUCTIONS: 

  1. Heat individual tortillas on a dry pan until slightly browned, pliable, and fully heated.
  2. Place bacon in pan and fully cook.
  3. Mix eggs with a little unsweetened almond milk and cook in olive oil. Salt and pepper to taste. Saute spinach in same pan until cooked. 
  4. Spread cream cheese on tortillas. Top with eggs, spinach, bacon and Violife cheese. Drizzle on hot sauce.
  5. Serve immediately and enjoy!
