RECIPE

INGREDIENTS:

  • POSITIVELY PLANTAIN TORTILLAS. 
  • 1/2 COOKED SWEET POTATO
  • 1/4 CUP BLACK BEANS
  • 1/4 CUP SPINACH
  • 1/4 CUP MUSHROOMS
  • VEGAN NACHO CHEESE SUCH AS SIETE’S 

INSTRUCTIONS:

  1. In a bowl, mash cooked sweet potato. 
  2. Rinse and drain black beans and set aside. 
  3. In a pan cook mushrooms until soft. 
  4. In an additional pan warm tortillas over medium-high heat until tortillas are soft and pliable.
  5. Once the tortillas are heated add mashed sweet potato, black beans, mushrooms, and spinach nacho “cheese” and then saute in a pan again until everything is heated. 
  6. Serve immediately and enjoy!
